Mexi-Cali Pie

1 lb lean ground beef
1 onion, chopped
1 red pepper, chopped
1/2 tsp garlic powder or 2-4 cloves of fresh garlic minced
1 15oz can of corn
1 15oz can of tomatoes with chiles, undrained
1 Tablespoon corn starch
1 Tablespoon chili powder
1 Tablespoon cumin
1 Tablespoon ground coriander
1/2 tsp salt
1/2 tsp ground oregano
2 tsp paprika
2 packages corn bread muffin mix
2 eggs
2/3 cups skim milk

Brown ground beef, onion, red pepper and garlic until the meat is fully cooked
Drain extra fat
Add corn, tomatoes, mix well
Add corn starch, chili powder, cumin, coriander, salt, oregano and paprika
Mix well
remove from heaat

Preheat oven to 400 degrees.
In separate bowl mix corn bread mixes, eggs and milk until just blended
In a 9x13 baking dish pour in meat mixture and top with corn bread mixture
Bake for 20 - 25 minutes or until top is slightly browned.

Crescent Chicken Squares

...not only do our kids love these but so do we!

1 4oz cream cheese
3 Tablespoons butter, melted
2 Cups cooked and cubed chicken
1/4 tsp salt
1/2 tsp pepper
2 Tablespoon milk
1 Tablespoon chopped green onions
1 8oz can crescent rolls

Combine cream cheese and 2 Tablespoon butter
Add chicken, salt, pepper, milk and green onions
Mix well
Form Crescent roll dough into 4 rectangles, press perforated edges together to seal
Place 1/2 cup of mixture onto center
Twist tops together to seal
Brush with butter
Bake 350 degrees for 20-25 minutes

Sweet Breadsticks

1 tube refrigerated breadsticks
1/4 cup melted butter
1/3 cup brown sugar
1/2 tsp garlic salt
1/4 tsp onion powder

Mix dry ingredients in a bowl
Unroll and separate breadsticks
Twist and dip in butter
Dip in dry ingredients
Lay on baking sheet
Bake according to package instructions

Toasted Tuna Melts

These are great to throw together and so good!!
4 slices thick sliced white bread, toasted
1/4 cup Cream Cheese Spread
1/4 cup miracle whip dressing
2 cans tuna, drained
1/2 cup chopped celery
1/2 cup sliced green onions
1 cup shredded cheddar cheese

Preheat oven 400 degrees
Place toast slices in single layer on baking dish, set aside
Mix cream cheese spread and dressing in medium bowl
Stir in tuna, celery and onions
Spoon evenly onto toast slices
Sprinkle with cheddar cheese
Bake 5 minutes or until cheddar cheese is melted

Monkey Munch

a favorite of Mia and Jacob's!

9 cups Chex cereal
1 cup semi-sweet chocolate chips, melted
1/2 cup smooth peanut butter, melted
1/4 cup butter, melted
1-2 tsp vanilla
1 1/2 cups powdered sugar

Measure cereal in LARGE bowl
Set aside
Microwave chocolate chips, peanut butter and butter for 1 minute on high
Stir
Cook for 30 seconds longer or until smooth
Add Vanilla
Pour mixture over cereal, stirring until coated
Pour mixture into large ziploc bag and add powdered sugar
Shake until completely coated
Spread onto wax paper to cool
Store in ziploc bag or large sealed bowl

Shrimp & Wild Rice Casserole

1 package wild rice
1 lb medium shrimp, peeled and divined
2 tablespoon butter
1/2 green bell pepper, chopped
1/2 onion, chopped
1 10 3/4oz can of condensed cream of mushroom soup
2 cups grated sharp cheddar cheese
Salt and Pepper

Cook rice according to package directions minus 1/4 cup water, let cool
Bring 2 cups water and 1/2 tablespoon salt to boil in medium saucepan cook shrimp for 1 minute
drain immediately and set aside
heat the butter in saucepan and saute pepper and onion until soft
Preheat oven to 325 degrees

Mix together rice, soup, 1 1/2 cups of cheese, shrimp, bellpepper and onion
Add salt and pepper to taste
Spray 9 inch square aluminum cake pan or 11x7 inch glass casserole dish with cooking spray.
Place mixture in the pan and top with remaining 1/2 cup cheese.
Bake for 30 minutes

Beef Enchiladas

1 lb Ground Beef
1 small onion, chopped
1 can chopped black olives
1 can of cream of mushroom soup
1 can of Enchilada sauce
8 oz of shredded cheddar cheese
6-8 flour tortillas

Brown the ground beef and saute the chopped onions together
Add in the olives and let it simmer
Add in 3/4 cheese just until it starts to melt
Fill tortillas with the meat mixture and roll up in 9x13 baking dish
In bowl combine 1 can cream of mushroom soup with enchilada sauce,
pour over enchiladas in baking dish
Top with remaining cheese
Bake at 350 for 30-40 minutes
